I don’t start my new job for another week, so I’ve got a lot of free time on my hands. I always loved Rice Krispie treats when I was a kid, and I got inspired to make a grown up version. And, well, I love bacon. And I love bourbon. And I love Rice Krispie treats. So why not bring together all of these things I love into one single tasty snack? I mean seriously, why not? (This is not a rhetorical question. Why not?)
Here’s what I came up with:
PIEHOLE WILLIE’S BOURBON BACON RICE KRISPIE TREATS
Ingredients
- 1 cup bourbon (use the good stuff… great ingredients = great food)
- 5 slices thick cut bacon, diced
- 4 tb butter
- 10 oz bag of mini-marshmellows
- 4 cups Rice Krispies
Method
Grease the inside of a baking pan (9×9″ for thicker treats, 13×9″ for thinner treats). Fry up the bacon and drain on a paper towel covered plate. Set bacon aside to cool. Add bourbon to a large sauce pan and simmer on low heat until reduced to 4-5 tablespoons (do not let it boil). Increase heat to medium-low and add butter. When butter is melted stir in mini-marshmallows. Continually stir until they are completed melted and integrated with the bourbon reduction. Stir in rice krispies and bacon and continually stir until all ingredients are well integrated. QUICKLY spoon into greased pan and roughly cover bottom of pan (its going to get very sticky very quickly). Wait 3-5 minutes them smooth out and lightly press down mixture to a consistent height in the pan. Let come completely to room temperature. Cut and serve.
